I don't know if modern manufacturers use seasoned high grade wood these days. Mainly seems to be composite wood materials. I suppose that that is behind the fashion for spray painting the tables' legs.

Many tables have been built from reclaimed oak from sunken ships , one such table is based in Lincolnshire at Burghley house which had an oak table that was made from the Battle ship Royal George sunk at spithead in 1782 not under fire but from maintenance , they rolled the cannon to one side so to tip the ship slightly to one side for repairs and it went too far over and sank , this ship has some history well after it had sank, salvage parts reclaimed in 1839 from the wreck where used to make an oak coffin for George Wombwell who died in 1850 so the billiard table will be around that date too , other parts where used such as the Bronze cannon where melted down and used at the base of Nelson's column , one remaining cannon was kept for display and is at Southsea Castle.

Geoff, is there any difference between tables of different woods from your point of view? Do you heave a sigh of relief when recovering a walnut table? Or maybe try to avoid oak ones? Or is it just the appearance that is different?

not realy Phil , oak , mahogany or teak , they are all good hardwoods , the modern philipino woods are a little soft though , Walnut not many solid ones about they are mostly veneered over hardwood or scotch pine .
the softer the wood the easier it is to plane them if the frames are out of true .
I like oak tables , but they can be a swine if they want planeing true .
